Scottish Cranachan

Scottish Cranachan – Serves 5

 

Ingredients

Butter                                   8g

Light muscavado sugar   85g

Jumbo oats                         85g

Mascarpone                       210g

Double cream                    250g

Whisky                                 65ml

Raspberries                        335g

 

Method

  1. Place the butter, sugar and oats into a saucepan. Stir over a high heat for 4 to 5 minutes, or until toasted and crunchy. Set them aside to cool
  2. Place the mascarpone and double cream in a bowl. Whisk until soft peaks form when the whisk is removed
  3. Add the whisky, one third of the raspberries and two thirds of the cooled oat mixture. Stir until combined, trying to keep the raspberries whole.
  4. Spoon into wineglasses. Top with raspberries and oats to serve
